Spicy Pork and Soba Noodles
Servings: 4   |   Prep Time: 20 minutes

6 ounces soba noodles
1 1 1/4-pound pork tenderloin, thinly sliced
kosher salt and black pepper
1 tablespoon vegetable oil
1/2 English cucumber, sliced
2 scallions, chopped
1 red chili pepper, sliced
2 tablespoons rice vinegar
2 teaspoons sesame oil

1. Cook the soba noodles according to the package directions.
2. Season the pork with teaspoon salt and teaspoon pepper.
3. Heat the oil in a large skillet over medium-high heat. In batches, brown the pork, 1 to 2 minutes per side. Transfer to a large bowl.
4. Toss the pork with the noodles, cucumber, scallions, chili pepper, vinegar, sesame oil, and teaspoon salt.

I made a very similar version of this dish except that it called for chicken instead of pork. I will try this one too but I think I'd use chicken in this one as well since it makes for a nice cold lunch and for that I think chicken might be a better option.

What is an "English" is it different from a regular old cucumber?

An English cucumber is a variety of cucumber that is generally sweeter than the regular, common cucumber. It is longer, sometimes a bit thinner, and has very tiny seeds. In contrast, a regular cucumber has many large seeds, which can have a more bitter flavour.
